Roasted Tomato & Artichoke Pizza

This flavoursome pizza is a true celebration of Mediterranean flavours. Using our sweet, and juicy tomatoes gives this simple pizza a real flavour kick. If you want, you can also add your choice of meat for something extra.

Ingredients

2 pnts cherry tomatoes
1 can Organico Artichoke Hearts in oil drained and quartered
2 tbsp extra virgin olive oil divided
2 Smokehouse pizza bases
1 tbsp grana padano freshly grated
2 cups rocket
1 tbsp fresh lemon juice
1/4 tsp salt
1/4 tsp freshly ground black pepper

Method

  1. Preheat oven to 180 degrees.
  2. Toss tomatoes and artichokes with 1 tsp of oil and arrange in a shallow baking tray. Grill in the oven, stirring occasionally, until slightly charred and blistered and removed.
  3. Top flatbread with half tomatoes and artichokes. Sprinkle with parmesan cheese, bake in oven for 10 minutes or until golden brown and crisp.
  4. In the meantime, toss the rocket with parmesan, lemon juice and remaining oil, salt and pepper.
  5. Cut pizza into wedges and serve alongside rocket salad.
  6. Enjoy!
