Roasted Tomato & Artichoke Pizza
This flavoursome pizza is a true celebration of Mediterranean flavours. Using our sweet, and juicy tomatoes gives this simple pizza a real flavour kick. If you want, you can also add your choice of meat for something extra.

Ingredients
2 pnts cherry tomatoes
1 can Organico Artichoke Hearts in oil drained and quartered
2 tbsp extra virgin olive oil divided
2 Smokehouse pizza bases
1 tbsp grana padano freshly grated
2 cups rocket
1 tbsp fresh lemon juice
1/4 tsp salt
1/4 tsp freshly ground black pepper
Method
- Preheat oven to 180 degrees.
- Toss tomatoes and artichokes with 1 tsp of oil and arrange in a shallow baking tray. Grill in the oven, stirring occasionally, until slightly charred and blistered and removed.
- Top flatbread with half tomatoes and artichokes. Sprinkle with parmesan cheese, bake in oven for 10 minutes or until golden brown and crisp.
- In the meantime, toss the rocket with parmesan, lemon juice and remaining oil, salt and pepper.
- Cut pizza into wedges and serve alongside rocket salad.
