Smoked Trout, Asparagus and Radish Salad

There is no better flavour combination than smoked trout and asparagus and to celebrate spring, we have a delicious recipe for this fresh, spring salad.

Light and fresh, this is simply mouth wateringly delicious.

Ingredients

1 potato julienned
4 asparagus spears thinly sliced lengthways
8 small radishes halved
1 shallot thinly sliced
1 lemon juiced
2 tbsp grapeseed oil
200 g Mrs Paynes Smoked Trout crumbled
2 cups watercress sprigs
1/4 cup dill roughly chopped

Method

  1. Blanch potato in boiling salted water until just tender, approximately three to five minutes. Drain and set aside.
  2. Combine asparagus, radish, shallot, lemon juice, oil and potato in a large bowl, season to taste and toss gently to combine.
  3. Add trout, watercress and dill, toss to combine and serve.
  4. Enjoy!
