Smoked Trout, Asparagus and Radish Salad
There is no better flavour combination than smoked trout and asparagus and to celebrate spring, we have a delicious recipe for this fresh, spring salad.
Light and fresh, this is simply mouth wateringly delicious.

Ingredients
1 potato julienned
4 asparagus spears thinly sliced lengthways
8 small radishes halved
1 shallot thinly sliced
1 lemon juiced
2 tbsp grapeseed oil
200 g Mrs Paynes Smoked Trout crumbled
2 cups watercress sprigs
1/4 cup dill roughly chopped
Method
- Blanch potato in boiling salted water until just tender, approximately three to five minutes. Drain and set aside.
- Combine asparagus, radish, shallot, lemon juice, oil and potato in a large bowl, season to taste and toss gently to combine.
- Add trout, watercress and dill, toss to combine and serve.
