Roast Plum and Grain Salad

Any plum will work perfectly in this simple and delicious recipe for Roast Plum and Grain Salad but we paricular like to use Blood Plums to add a beautiful ruby colour to the salad.

Recipe adapted from Gourmet Traveller. 

Ingredients

6 plums halved, stone removed
70ml extra virgin olive oil
½ cup cracked Freekeh
200g rocket
½ cup flat leaf parsley, coarsely chopped
juice of 2 lemons, finely grated rind of 1
60g pistachios, coarsely chopped
100g Barambah Labne

Method

  1. Preheat the oven to 200 degrees. Place plums, cut side up on an oven tray lined with baking paper, drizzle with 2 tbsp oil, season to taste, roast until tender and set aside.
  2. Meanwhile, cook Freekeh in a saucepan, with 1 ½ cups water and a pinch of salt. Bring to a boil. Reduce the heat to a simmer and cook, stirring occasionally for 15 minutes until the water has been absorbed. Remove from the pan, spread on a large baking tray and set aside to cool.
  3. Combine Freekeh, rocket, parsley, pistachios, lemon juice and rind, remaining oil, plums and plum roasting juices on a large serving platter, season to taste, toss gently to combine, top with Labne and serve.
