Roasted Pear, Gorgonzola & Walnut Salad
The sweet juiciness of pears, and the sharp pungent bite of blue cheese in this roasted pear, gorgonzola & walnut salad is the perfect combination.
Ingredients
SALAD
1 tbsp extra virgin olive oil
4 pears, halved and core removed
3tbsp agave nectar
500g mixed leaf lettuce
1 cup roasted almonds
1 tbsp butter
1 tbsp brown sugar
1 cup crumbled gorgonzola
¾ cup pomegranate seeds
Salt and pepper to season
DRESSING
½ cup cider vinegar
1 tbsp minced shallot
½ tbsp. thyme
1½ cup extra virgin olive oil
1 tbsp minced garlic
½ tbsp. fine chopped parsley
Method
- Preheat oven to 180 degrees. Heat oil and butter in a medium sized pan and brown cut side of pears.
- Add to baking tray and glaze with agave nectar and brown sugar.
- Roast for approx. 10 minutes or until soft and leave to cool.
- Cut pears in half again. Place greens in a salad bowl and top with pear, gorgonzola, walnuts and pomegranate.
- Combine dressing ingredients and whisk.
- Drizzle dressing over salad and enjoy!
