Quiche Leekraine

Our produce of the week is Leek. From Deavon Meadow, our leek is extremely versatile and can be used as a supporting flavour, a side or as the star of the show.

Perfect for warming winter meals like this Quiche Leekraine, leeks are also a great source of Vitamin K.

Recipe adapted from Jamie Oliver. 

Ingredients

300 g leeks diced
1 tbsp olive oil
3 slices bacon diced
75 g cheddar cheese
3  free-range eggs
250 ml of milk
1 sheet Careme Sour Cream shortcrust pastry

Method

  1. Preheat the oven to 180 degrees.
  2. Trim and finely slice the leeks, then sautée with a splash of oil until soft and sticky.
  3. Chop the bacon, then fry in a separate pan until golden.
  4. Coarsely grate the cheese.
  5. Whisk together the eggs, then stir through the cheese, milk, leeks, bacon and a good pinch of seasoning.
  6. Lay the pastry sheet in a baking tray, then lay a sheet of parchment paper and fill with blind baking beans, or rice and cook for 10 minutes.
  7. Pour the mixture into the case and bake for 25 to 30 minutes, or until golden.
  8. Serve with a mixed green salad.
