Zucchini Pasta with Spinach and Parmesan

For this zucchini pasta recipe you only need five ingredients and about twenty minutes, and it’s that simple. We’ve kept the ingredients simple but add sauce of your choice as you would regular pasta.

We have kept the ingredients simple for this healthy, paleo, spaghetti alternative, but feel free to add your sauce as you would regular pasta.

Ingredients

3 medium zucchinis
2 tbsp butter
2 cloves garlic minced
4 cups spinach
1/4 cup Parmesan cheese grated

Method

  1. Spiralize the zucchini and set aside.
  2. Place a large pan over medium-high heat. Melt the butter and add the garlic, cook for 1-2 minutes.
  3. Add in the zucchini noodles and spinach. Gently toss and cook until spinach leaves are wilted, about 2-3 minutes.
  4. Stir in 1/4 cup of the Parmesan cheese and toss until zucchini noodles are coated in the parmesan cheese. Season with salt and freshly ground black pepper, to taste.
  5. Remove from heat and serve.
