Chocolate Covered Strawberries
Bursting with flavour, strawberries are often best enjoyed on their own, but the flavour combination of chocolate and strawberries in our recipe for chocolate covered strawberries is just perfection.

Ingredients
500g strawberries
2 cups Simon Coll 50% chocolate chopped
Method
- Wash and dry the strawberries under cool running water. The strawberries need to be completely dry before dipping so spread them out and let them air dry if necessary.
- Fill the bottom of a saucepan with an inch or two of water and bring to a simmer over medium to high heat.
- Transfer the chocolate into a heat proof bowl and set this over the simmering water. Let the chocolate melt, stirring occasionally, until no more lumps remain.
- Remove the bowl with the chocolate from the heat.
- Set the bowl of mixed chocolate in front of you on a towel. Place the dried strawberries to your left.
- Line a baking tray with parchment paper and place this on your right.
- Dip the strawberries, one strawberry at a time and carefully lay the strawberries on the baking sheet.
- Let the chocolate set by leaving the strawberries to sit until the chocolate coating is set and dry to touch. To speed this along, place in the fridge.
