Vanilla Doughnut Peaches with Macadamia Nougat Cream
This FODMAP friendly recipe for doughnut peaches from Deliciously Legal is easy and truly enhances the already delicious flavour of these peaches from Ardmona, Victoria.
Ingredients
MACADAMIA CREAM
250 g macadamia nuts
120-160 ml rice malt syrup
120 ml of coconut oil melted
400 ml coconut
1/2 lemon juiced
1 tsp vanilla powder
1/4 tsp pink Himalayan salt
VANILLA DOUGHNUT PEACHES
1 kg doughnut peaches halved crosswise
1/2 lemon juiced
60 ml rice malt syrup
1 vanilla bean split lengthways
TOPPING
1 Vegan Nougat sliced
Roasted macadamia nuts chopped
Fresh mint leaves
Method
- To make the cream place all ingredients into a high-speed blender. Blend until smooth and creamy.
- Adjust sweetness and place in a jar in the refrigerator for 4 hours or until set. Stir twice during the cooling period.
- To make the peaches place all ingredients into a large open mouthed deep frypan. Place over medium heat.
- Stir occasionally and cook for 15-20 minutes or until tender. Remove from heat and allow to cool.
- To serve place peaches in a serving bowl with dollops of cream topped with nougat, macadamia nuts, peach syrup and mint leaves.
