Rhubarb Compote

This rhubarb compote is a great way to eat rhubarb. It requires minimal effort and few ingredients, is ready within a half hour, and can be eaten immediately or stored in a jar for a few days.

Recipe adapted from Beautiful Ingredient. 

Ingredients

4 cups rhubarb (about 3 large stalks)
1/3 cup maple syrup
½ tsp freshly grated ginger
1 tbsp vanilla essence

Method

  1. Remove ends and thinly slice the rhubarb, about ¼ inch thick, or less.
  2. Place the sliced rhubarb in a pot with the syrup and ginger. Bring to a boil slowly (over medium heat) which will take about 10 minutes.
  3. Reduce and simmer for about 8-10 minutes, until all the rhubarb has broken down.
  4. Remove from the heat and stir in vanilla.
  5. Taste and add more syrup by the tablespoon if too tart.
  6. Enjoy over ice cream, waffles, oats, toast, granola, on its own or on anything else you wish.
