Mango Chia Pudding

This delicious Mango Chia pudding recipe combines the tropical freshness of real Kensington Pride mangoes with chia seeds and pure coconut – with no added sugar.

A healthy energy boosting breakfast or snack any time of day, this chia pudding is power packed with omega-3, fibre and protein as well as antioxidants which makes this the perfect start to your busy day.

Ingredients

1 cup of water
1/4 cup Natures First Chia Seeds(black or white)
1  Kensington Pride Mango flesh for pudding
1  Kensington Pride Mango quartered for garnish
1 tbsp Baramah Organic Natural Yoghurt
1  lime

Method

  1. Combine water and chia seeds into a bowl and stir gently for three minutes.
  2. Set aside for twenty minutes, stirring three to four times to allow the chia seeds to form into a soft gel.
  3. Puree the mango pulp until smooth in a blender and spoon into a bowl.
  4. Add ½ cup chia gel and natural yoghurt and mix through until well combined.
  5. Divide between two serving bowls.
  6. Garnish each pudding with ¼ mango cheek and drizzle with lime juice.
