Slow Roasted Tomatoes

Slow roasted tomatoes have an extra depth of flavour due to the long cooking process. Already bursting with flavour, our seasonal tomatoes take this dish to another level.

Ingredients

8 medium super sweet Adelaide tomatoes
extra virgin olive oil
salt and freshly ground black pepper
2 tbsp dried oregano
2 tsp caraway seeds

Method

  1. To make the caraway salt, in a mortar and pestle, combine the caraway and salt and pound until fine. Set aside.
  2. Preheat the oven to 130 degrees. Place the tomatoes on a wire rack on a tray. Drizzle liberally with oil, season heavily with salt and pepper and scatter with oregano.
  3. Roast for 3 hours.
  4. Remove from the oven and serve on a large platter, drizzled with more oil and dusted with caraway salt and some extra pepper.
  5. Enjoy!
