Asparagus and Lemon Butter Sauce

This budget friendly, quick and easy asparagus, drizzled with lemon butter sauce and a sprinkle of parmesan cheese is the perfect side dish for any meal.

The delicious sauce really makes this dish, and you’ll be left wanting more.

Ingredients

ASPARAGUS 

1 bunch asparagus spears
water
salt

LEMON BUTTER SAUCE 

3 tbsp fresh lemon juice
3 tbsp The Stock Merchant Vegetable Stock
1 tsp white vinegar
3 tbsp cream
1 tsp sugar

4 tbsp unsalted butter cut into parts
salt
freshly ground black pepper

Method

  1. Fill a large pot with water and bring to the boil.
  2. Add asparagus to the boiling water, cover with lid and let it steam until it’s cooked to your liking, approximately five to eight minutes.
  3. Drain and transfer to a large bowl of ice water to cool and drain again.
  4. In the meantime, combine the lemon juice, vegetable stock and white vinegar in a saucepan over medium heat, reduce the sauce by half.
  5. Turn the heat down and whisk in the cream, keep whisking to break up the curds.
  6. Add sugar and continue to whisk while adding the butter. Season with salt and pepper. Simmer until sauce begins to thicken. Remove and let stand for a few minutes.
  7. Season to taste and transfer asparagus to a serving plate and drizzle with lemon butter sauce.
