Mango Chutney

This delicious mango chutney using our Kensington Pride Mangoes is the perfect addition to an abundance of meals and ingredients.

Add to grilled bacon, ham and chickpea salad or aged cheddar.

Recipe adapted from Good Food.

Ingredients

170 ml Malt Vinegar
500 g Billingtons Light Muscovado
1 tbsp sea salt
7 Kensington Pride Mangoes peeled and roughly chopped
200 g raisins
1 brown onion finely diced
20 g ground ginger
1 Granny Smith Appleunpeeled and cut into cubes

Method

  1. Heat the vinegar, sugar and salt in a heavy-based stainless steel pot until the sugar dissolves.
  2. Add the mango, raisins, onion, ground ginger and apple.
  3. Return to the simmer and continue cooking for approximately 45 minutes or until thick and saucy.
  4. Pour into clean sterilised jars and seal immediately. This will keep for 12 months in a cool dark pantry.
