Green Bean Salad with Roasted Almonds & Goats Cheese
This Green Bean Salad with Almonds and Goats Cheese is a delicious combination of flavours, plus it is also super nourishing. Perfect served alongisde your Sunday roast, or enjoyed on a warm summer day.
Ingredients
1 1/2 tbsp dijon mustard
3 tbsp white wine vinegar
3/4 tbsp salt
1/2 tsp black pepper
1/3 cup extra virgin olive oil
1 tsp for roasted nuts
500 g green beans trimmed
3/4 cup almonds roasted, diced
100 g goats cheese crumbled
Method
- Preheat oven to 180 degrees. Spread the nuts in an even layer on a baking sheet. Drizzle with oil.
- Place in the oven and roast for 5 minutes, remove and stir. Check the nuts again after 3 to 4 minutes and remove. Set aside to cool.
- In a medium bowl, whisk together the mustard, vinegar, salt and pepper. Gradually add the oil and whisk until well combined; set aside.
- Bring a large pot of salted water to a boil. Add the green beans and cook until just tender, 6 to 8 minutes. Drain, run under cool water to cool, and set aside until you are ready to assemble the salad
- Once cooled, roughly chop nuts.
- In a large bowl, combine the green beans and nuts. Add the goats cheese and vinaigrette just before serving.
- Toss well and serve at room temperature or chilled.
