Avocado Buddha Bowl
Nutritious and delicious, the recipe for this Avocado Buddha Bowl is not only packed full of nutritious goodness, but is ready in under 20 minutes.

Ingredients
SALAD
avocado, sliced
½ cup quinoa, rinsed
1 cup mixed greens
1 ½ cup chickpeas, drained
1 carrot, diced
1 cucumber, sliced
½ radish, sliced
DRESSING
2 tbsp tahini
2 tbsp lemon juice
1 tbsp tamari
1 tbsp maple syrup
4 tbsp water
Method
- Add quinoa with 1 cup water to a saucepan and bring to the boil for 2 minutes, whilst stirring. Cover and let simmer until all water is absorbed. Set aside and let cool.
- Prepare all other ingredients.
- Pour the cooled quinoa into a large bowl. Add the rest of the ingredients on top; the avocado, mixed greens, chickpeas, carrot, cucumbers and radish.
- Mix the dressing and drizzle on top.
- Toss to serve.
